- What Happens When You Tell People You Can't Eat Gluten uploaded by CollegeHumor
- Most People Shouldn't Eat Gluten-Free by Rachael Rettner - "For most other people, a gluten-free diet won't provide a benefit, said Katherine Tallmadge, a dietitian and the author of "Diet Simple" (LifeLine Press, 2011). What's more, people who unnecessarily shun gluten may do so at the expense of their health, Tallmadge said. That's because whole grains, which contain gluten, are a good source of fiber, vitamins and minerals, Tallmadge said. Gluten-free products are often made with refined grains, and are low in nutrients. If you embrace such a diet, you'll end up "eating a lot of foods that are stripped of nutrients," Tallmadge said. Studies show gluten-free diets can be deficient in fiber, iron, folate, niacin, thiamine, calcium, vitamin B12, phosphorus and zinc, she said."
- Saying you can't eat gluten because it bloats you is like saying you can't touch anything because you got a cold once after touching someone and now you have "that disease that the boy in the bubble had." (some people do think that... fear of germs) That food that you ate, probably was loaded with a ton of harmful, dangerous chemical additives, plus, you couldn't eat a lot of the food you eat because it has gluten in it. Yes, certain people can't have gluten, just like certain people have to live in a "bubble" but it's rare and doesn't happen to everyone. Stop wishing something horrible onto yourself just because of a fad or weight loss tactic. If you want to stay away from gluten that is up to you, just don't be trapped in the idea of others who want to diet and want EVERYONE else to diet so they say a food that isn't bad Same with oils (organic,or course because hydrogenated REALLY is bad for you, sugar (natural sugars are good for you and have benefits, etc. This is why I created this site, just look around and understand that not everything is bad for you just because it's yummy.
- People are saying they are gluten intolerance eating at McDonalds...:O Even oats have gluten, you couldn't eat many oats, etc but people do and claim they are gluten intolerant. It's not "intolerant" it's complete pain, diarrhea,a trip to the hospital, etc if a person eats even a tiny bit of gluten, nuts, seeds, etc. Unless you poop your brains out or get really harsh stomach aches numerous times after eating a certain type of foods you probabaly are not actually gluten-intolerant. That is what actual allergy looks like
- Dear America: Quit Flipping Out About Gluten by Albert Burneko - "Gluten also happens to be a staple nutrient of humankind; in all the thousands upon thousands of years since the advent of agriculture, it has been one of the primary protein sources in the human diet. It's cheap and abundant—and, crucially, it's completely harmless to the 99 percent of human beings who do not suffer from a congenital autoimmune disorder called celiac disease. As you probably can deduce, that one-percent figure (celiac disease sufferers) doesn't quite match up with the 33-percent figure (Americans who say they're trying to eliminate gluten from their diets). This is the bizarre phenomenon Michael Specter interrogates in the New Yorker piece; what he finds is a soup of pseudoscience, conjecture, diet-fad stupidity, and the regular kind of stupidity."Gluten sensitivity"—a bullshit pseudoscientific term driving much of the gluten-free nonsense in our culture today—is largely self-(mis)diagnosed, by people who (conveniently) mistake the shitty feelings and physiological unwellness caused by a more broadly unhealthful lifestyle for a medical condition caused by wheat gluten. Most of the remaining "gluten sensitivity" diagnoses are made by unqualified quacks..."

- Wholly WholeGrains - ""whole grains include the entire grain which include the bran (fiber-rich outter layer), endosperm(the middle part) and the germ )the nutrient-rich center). Whole grains contain healthy viber, vitamins, minerals and phytochemicals which refined grains have removed."
- Wellness & You: Grains
- How Do Whole Grains Improve Health? - "The bran and fiber in whole grains make it more difficult for digestive enzymes to break down the starches into glucose. Soluble fiber helps lower cholesterol. Insoluble fiber helps move waste through the digestive tract."
- Why Choose Whole Grains? - When grains are milled for refinement, the bran and germ of each kernel are separated and removed. This makes the grains more shelf stable but strips them of vital nutrients and the nutty flavor that distinguishes whole grains from refined grains.
- Whole grains: Hearty options for a healthy diet - "All types of grains are good sources of complex carbohydrates and some key vitamins and minerals. Grains are also naturally low in fat. All of this makes grains a healthy option. Better yet, they've been linked to a lower risk of heart disease, diabetes, certain cancers and other health problems."
- Quinoa - large seedheads that can be almost any color, from red, purple and orange to green, black or yellow. Quinoa may be useful in reducing the risk for diabetes. About 28% of quinoa's fatty acids come in the form of oleic acid, a heart-healthy monounsaturated fat, and about 5% come in the form of alpha-linolenic acid or ALA—the omega-3 fatty acid most commonly found in plants and associated with decreased risk of inflammation-related disease."
- Barley - " having up to 30% fiber! (For comparison, brown rice contains 3.5% fiber, corn about 7%, oats 10% and wheat about 12%.) While the fiber in most grains is concentrated largely in the outer bran layer, barley's fiber is found throughout the whole grain, which may account for its extraordinarily high levels."
- Rye - " Lowers Insulin Response, Improves Blood Glucose, better blood sugar control, and reduced risk of type 2 diabetes, reduces inflammation. Scientists at the University of Kuopio studied gene expression in 47 middle-aged adults who ate either an oat/wheat bread/potato diet or a rye/pasta diet for 12 weeks. They found 71 down-regulated genes with the rye/pasta group, including some involved with impaired insulin signaling, in contrast to 62 up-regulated genes in the oat/wheat/potato group, including genes that related to stress and over-action of the immune system, even in the absence of weight loss.
- Triticale - Better blood sugar control, and reduced risk of type 2 diabetes
- Oats - Eating oats helps lower LDL "bad" cholesterol and may help reduce the risk of heart disease.Oatmeal and oats may help lower blood pressure. Oats are high in beta-glucans, a kind of starch that stimulates the immune system and inhibits tumors. This may help reduce your risk of some cancers.Beta Glucans Improve Immune System Defenses.Oats may help reduce your risk of type 2 diabetes, since their soluble fiber helps control blood sugar.Oatmeal and oats may help lower blood pressure.

- What is Spelt Flour? - "Spelt is a cereal grain in the wheat family that has been cultivated for thousands of years - originally in Iran, then Europe and only in the past century has spelt been cultivated in North America. It is similar in appearance to wheat but has a much harder outer shell. Use Spelt flour in place of AP flour - "Because spelt is more water-soluble than wheat, it is often recommended to use three quarters the amount of liquid in a recipe when making substitutions for wheat flour"
- Millet - Slowed progression of atherosclerosis, the build-up of plaque that narrows the vessels through which blood flows.Prevention heart disease as “ Magnesium has been shown in studies to reduce the severity of asthma and to reduce the frequency of migraine attacks. - Does white flour contain bleach The low-down on bleached flour by Tiffany @ Don't Waste the Crumbs - "Bleach flour is refined white flour that has been artificially aged using a bleaching agent, a maturing agent, or both.WHY WOULD FLOUR NEED TO BE BLEACHED? Because people are vain. In our minds, flour should be white.Chemicals used in bleaching flour include : "Potassium Bromate, Benzoyl Peroxide,Azodicorbonamide, Chlorine Gas, Nitrogen Dioxide,Ascorbic Acid" and more.
- The whole truth: How healthy is your pasta? - "A 100 percent whole-grain pasta includes all three layers of the wheat kernel: the bran, the germ and the endosperm. Because nothing is removed during processing, whole-grain pastas contain more natural fiber and micronutrients than their white, refined cousins. ...regularly choosing whole-grains over the refined type is associated with numerous health benefits, including lower blood pressure and reduced risk of many chronic diseases, including type 2 diabetes and heart disease."

Replace the removed all-purpose flour with 2 tablespoons of cornstarch.Sift flour 5 times. Yes… 5 times. Sifting the flour and cornstarch together will help thoroughly combine the mixture and help to lighten and aerate the flour."
- All-Purpose Flour Blend - Rice flour, tapioca starch/flour, cornstarch or potato starch
enriched/fortified - I,personally, in my opinion, can see getting something that is fortified. Butr enriched grains and enriched flours have already been through the bleaching process. Your body will not be able to digest it as well as it would if it wasn't F*ING BLEACHED!(see above for the dangers of consuming bleached pastas). Buy whole, organic flours and pastas. Make your own bread with organic flours, etc. They have to add vitamins and minerals to make it look healthy. But how can the body digest synthetic vitamins. That is why doctors always complain about vitamin supplements. They say to get them from whole foods rather than a pill since it is not absorbed correctly by the body.
- "Enrichment – adding back nutrients that were lost or diminished during food processing. B vitamins are lost when wheat is refined are added back to white flour. That’s why many breads are “enriched with vitamins.”Fortification - adding nutrients to a food that weren’t originally present. For example, milk is fortified with vitamin D, which improves the body’s absorption calcium and phosphorus present in milk.- Fortified and Enriched Foods – Better for You? @Fooducate
- "For example, refining wheat to make white flour removes several B-complex vitamins and iron that are contained in the part of the grain that's removed. Flour becomes enriched when those nutrients are added back in before it's packaged.... Fortified foods also have extra nutrients added by food manufacturers, but not they're not necessarily meant to replace nutrients that were lost during processing. Food fortification can help provide nutrients that tend to be deficient in the diet." - Health @ About
